The problem? Whenever I try to separate these suckers, I inevitably add bits of egg shell to my bowl of whites. If I happen to catch it before I start cooking, I have to go "fishing" for it, which is not an easy task. And if I don't notice the contamination, someone eventually gets a little surprise with their omelet.
The other issue is keeping my whites free of yolk. I don't mind if a little bit seeps through every now and then, but if I have a few too many slip-ups, then my calorie counting gets a lot more complicated.
