When shopping for dried fruit at the grocery store, I look for the white-shirted girl with the red bonnet. As in, the lady on the Sun-Maid package. Raisins are one of Emma’s favorite snacks, and it’s probably one of the more nutritious of all of the treats in our pantry. Packed with vitamins and rich in fiber, they also taste great. Just recently, we had an opportunity to try two other Sun-Maid products, Tropical Trio and Fruit Bits.
After visiting the Sun-Maid website, I couldn’t help but notice the recipes tab. After clicking over, I realized that this was an excellent way to show you the possibilities of cooking with their dried fruits. The Spiced Tropical Fruit Salsa was perfect for this Summer Essentials event.
I made this the other night along with grilled pork chops, but it would be great with practically anything. The recipe also suggests pairing this salsa with shrimp, chicken, or as a dip or over a soft cheese. It was easy as can be.
Just get your ingredients together:
1 package (7 ounces) Sun-Maid Tropical Trio
1/2 cup apple juice
2 tablespoons cider vinegar
1/4 teaspoon ground coriander
1/8 teaspoon ground cumin
pinch cinnamon
pinch cayenne pepper
2 tablespoons apricot jam
Mix together everything except for the jam in a medium-size bowl. You can either boil the mixture over the stove, or pop it into the microwave, my method of choice. Once boiling, mix in the jam and let the salsa stand for a few minutes. I served mine hot with the pork chops, but you should store it in the refrigerator for consumption later on.
I prefer to cook with the Tropical Trio fruits because they are so sweet. The Fruit Bits are what Emma loves to snack on right from the bag. They’d also be a great add-on to a fresh salad. Yum!
